Ingredients

1 pound shrimp medium, cooked, peeled and deveined
1 can black beans rinsed and drained (14-19 ounces)
1 jicama peeled and julienne (about 1 1/2 cups)
1 papaya ripe, peeled, halved, seeded and chopped
2 kiwifruit peeled and sliced
1/2 medium onion red, thinly sliced
1/2 cup cilantro fresh, chopped
1/4 cup extra virgin olive oil

 

Preparation

On serving plates, arrange the shrimp, beans, jicama, papaya, kiwifruit, onion, and cilantro.

Drizzle with the oil.
