Soft Pretzels
To form the dough, use an electric mixer with a dough hook or a bowl and wooden spoon. Dipping the pretzels in a mixture of simmering baking soda and water gives soft pretzels their trademark deep golden hue.
Pre-Baked Pie Shell
Once the pan is in the oven, leave the foil lining and weights in place until the dough loses its wet look, turns an off-white from its original pale yellow, and the edges just start to take on a very light brown color. Carefully (the dough is hot) touch the side of the shell to make sure that the crust is set: firm and able to hold itself up. If you remove the weights too soon, the dough sides will slip down, ruining the pie shell.
Slow-Roasted Halibut with Shaved Asparagus and Fennel Salad
Thinly shaving the asparagus gives the familiar vegetable a new look—and a delicate taste. Because the asparagus is shaved so thinly, there is no need to cook it.
Quiche Lorraine
The center of the quiche will be surprisingly soft when it comes out of the oven, but the filling will continue to set (and sink somewhat) as it cools. If the pie shell has been previously baked and cooled, place it in the preheating oven for about five minutes to warm it, taking care that it does not burn. Because ingredients in the variations that follow are bulkier, the amount of custard mixture has been reduced to prevent overflowing the crust.
Leek and Goat Cheese Quiche
The center of the quiche will be surprisingly soft when it comes out of the oven, but the filling will continue to set (and sink somewhat) as it cools. If the pie shell has been previously baked and cooled, place it in the preheating oven for about five minutes to warm it, taking care that it does not burn. Because ingredients in the variations that follow are bulkier, the amount of custard mixture has been reduced to prevent overflowing the crust. Be sure to wash the leeks thoroughly to remove any grit.

Oven-Baked Herbed New Potatoes
These crispy oven-baked potatoes are not only lower in fat than fried potatoes but also incredibly simple to make. In fact, the most "difficult" part of this recipe is washing and slicing the potatoes. The recipe calls for ordinary Italian seasoning (you might already have it in your cupboard), or you may use your own favorite fresh or dried herbs. We added paprika to deepen the flavor and give a little Hungarian pizzazz! Whether you are serving fish or meat, these crispy potatoes will make a perfect side dish.
