Recipe Description

Huevos Rancheros are perfect for entertaining since you can prep everything ahead of time and multiply the recipe almost infinitely. You can also make it more or less complicated: If you don't want to cook beans, make the variation. If you want to go all out, serve them with sliced or crumbled chorizo or other sausage, Radish Salsa, avocado slices, chopped fresh chiles, shredded lettuce, and limes. Some crema on the side is also nice. 

Ingredients

¼ cup neutral oil, like grapeseed or corn, for frying, plus more as needed
4 5‐inch corn tortillas
¼ cup Real Refried Beans or any soft, well‐seasoned beans
1 tablespoon butter, lard, or bacon fat
4 eggs
Salt and freshly ground black pepper
½ cup Salsa Roja or Salsa Verde
¼ cup queso fresco or grated Monterey Jack or cheddar cheese
¼ cup chopped fresh cilantro or parsley leaves for garnish

 

Preparation

Heat the oven to 350°F.

Heat ¼ cup of the oil in a small skillet over medium heat.

  1. When the oil is hot but not smoking, fry the tortillas one at a time until softened and heated through, about 3 seconds per side. Make sure they do not crisp.
  2. Drain on paper towels.
  3. Spread 1 tablespoon of the beans in the center of each tortilla and set aside. (At this point, you may set the tortillas aside for up to an hour or so.)
  4. Put the butter in a large skillet over medium heat.
  5. When melted and hot, add the eggs. Cook until translucent, about a minute, then turn the heat to low and sprinkle with salt and pepper.
  6. Cook until a little less done than you like them, just a few minutes.
  7. Put an egg in the center of each tortilla, then top with 2 tablespoons salsa and 1 tablespoon cheese.
  8. Carefully transfer the tortillas to a baking dish that will hold them snugly.
  9. Bake until the cheese is melted, about 5 minutes, then serve immediately, garnished with herbs.


Variations: Omit the tortillas and beans. Scramble the eggs in the butter; as they are beginning to set in the pan, stir in the salsa and cheese. Sprinkle with a little salt and pepper and serve.
